I know it's possible to supress details for living people and change their
name to "living." Is it possible to just not export anything about them
at all by clicking a box, or can this only be done by search/tag?

to Options > Customize > General In the LDS area select the option there
on how you want Temple Names set up. That option will then be used for
the temple name when you export to a GEDCOM.

When I export my file to Rootsweb some of the
individuals in my file have "See attached sources" in
the General notes field. When I check my original file
