when sending a message, the pop up menu is set to none.
When I went to mail preferences, the pop up menu was dimmed
I can not find out how to change my default signature.

I know back in the days, you'd suggested I try Screenflow. So I'm curious.
what's the difference in using Quicktime from using Screenflow?

Try Screenflow. Works wonderfully. It's somewhat pricy from what I hear,
but from what little I used of the trial, it's very very good.

Open up Safari, and go into Preferences with Command+Comma.
Look on the general tab. You should see the option there.
