If it is a fillable document, then I would expect any application that can read PDF would work including Adobe Acrobat Reader, Microsoft WOrd, and preview. If it is one that needs you to type in markups, even then Preview on the works for sighted people, though the gold standard on the Mac side

If two apps are cutting off an area in the same manner, make sure your window is set to full view. In skim in the menu bar windows and zoom do the trick. You can set a shortcut for zoom. Btw, cmd a and then cmd c will copy all the text of a pdf file to the clipboard. It can then be pasted

I too have frustrations with reading pdf's right now. I often have to read pdf documents. I am using preview. I get so frustrated that anytime I leave the window if I return I am back at the very beginning. G, this wastes a lot of time when I then have to find my place again
