Have you looked into doing differential/incremental backups? Say,a 2-tape backup set on the 1st of the motnh, then diffs on the other days? Otherwise, I'd say back up your Exchange store, the DHCP, WINS, DNS databases and the data files and be prepared for a complete reinstall (including programs)
