just saw an almost complete case of 200 12-exposure rolls of Kodak Max 400, all
expired 2004 (at a thrift store for $25); i was thinking of it as the
equivalent of a 64GB SD card

I got it free, essentially - so if it doesn't work well, not a biggy...
I once had some leakage on a cartridge - but that was a few years ago.
I've been using Epson inks/printer for longer than 5 years

cartridges:
1) those showing being empty after the first page printed,
and
2) those showing being empty suddenly after (and while still) having
about half of a cartridge.
All those were genuine Epson cartridges p

I actually don't do a lot of serious color printing. But I print labels
and such almost every day. No real way to know for sure if it's ok
until time to change the cartridge - but it was good to get a real bargain
