I've realized I need to add a new section but I can't figure out how to

It would in fact, be desirable if the accidental removal of the last
node did not result in a feature being deleted, IMO.

Yes, I would be up for learning how to do it. I remember once upon a
time trying to get started and somehow getting stranded before I got
anywhere. Partly because I couldn't get linux to work on VM on my laptop
so I couldn't do the screen shots.

The Node Tool is not meant to remove features, but to edit/remove their
geometries. Your feature persists in your dataset through their attributes
and you can later use the "Add part" tool to create a new geometry.

I have to say that deleting features by using the node tools seems a bit
"unconventional" to me. There is a "delete features" tool, which is
meant to be used to delete features. The node tools serves a different
purpose: to remove nodes.

I can confirm that X11 is required by some features like printing and maybe
some others. Also before switching to docker, on bare metal, we were using
Xvfb to provide X11 to QGIS and not a full X.org installation.
This is due how QT renders work if I understood correctly.

You can now build QGIS Server without desktop, but not without X. You
still need X for PDF generation (GetPrint command).
If you are interested, I have docker configurations for QGIS Server 2.x.
and 3.x based on Ubuntu and NginX server. Still struggling a bit with
NGinX URL
