The usability of 10 speed chains may have something to do with using
thinner cogs than what existed in the days of 7 speed cassettes and
freewheels.
I’m just guessing but it would make sense to use parts which are currently
available.

I’m definitely in for at least one.
I’m also curious about the V-brakes. The feature of being able to open far
enough to clear a fat tire has me sold.
