p.s. my vortexbox replacement is LMS running on rPi4B inside a flirc
case (all the size of a pack of playing cards), with 4TB USB drive
attached to the rPi. Super fast and very well supported

My browser Google Chrome and the pop-up tray doesn't have an icon for
LMS. Am I looking in the right place, or is there a setting somewhere
that needs switching on?
You'd have to check the tray on the LMS machine, not your client.
Or just download the installer, as apesbrain suggested.

Try 7.9 on another Computer and you'll see.
I can't decide for you. But if you got your issues sorted out with
another LMS I'd really consider to build your von from scratch. Or take
a different approach and install piCorePlayer or Max2Play on an
Raspberry. That should be nearly straight forward.

At this point I might just install vortexbox 2.4 from scratch. Make sure
you have a good backup if your files, as this will wipe your disk.

..deb packages come in various flavors for different platforms. If you
picked the -all variety, then there will be a lot of overhead due to
binary files for all the platforms you don't need. Make sure you only
pick the one you need.

However be prepared for a forced rescan if have not uptaded in while,
coming from some old version.
Do the upgrade while your doing something else and let the scan run its
course.

I'd suggest you get the 7.9.0 build I plan to release "officially" today:
