I'm trying to imagine a tag with a wider meaning, so I created a table
in which I put the different sports more or less competitive, grouping
them in some way.
For every sport for which there are typical facilities I put the common
names with which these are called.

You're right, there is piste:type=sled and sport=bobsleigh.
The former could be tagged with the latter.
Sport=* is not a physical tag, it tags the sports exerced in another feature
(pitch, stadium, building,...).
So sport is probably what you would want to use on your racetracks.
