Ah, I have the same problem. I asked mike over at UBNT the other day about that with the Bullet M's. I wanted to know if it was cool to power them up without antenna because I needed to configure 12 of them and I didn't want my eyes to melt. He said it was okay for a short period of time..

You can strip the shield back on coax like suggested, but you stand the chance of having too high of a standing wave ratio and harming the RF amp. You can just keep a couple rubber duckies with the right gender changer on the bench, or terminate to a proper dummy load like these:
