One of the high voltage methods used involved an arc being drawn just
above the water surface by one of the electrodes.
This was found to result in nitric acid being formed. Not really a
good thing to ingest regularly.

Good design alleviated this.
One way was to use a CO2 blanket in the container.
There are other ways, too.
