Wayne Goldin, The current doesn't matter, you won't be leaving the brew in long enough for the current to increase much.
If you want to make a quart at a time, 6 volts will take you forever. Can you get some more adapters and connect them together? 36 volts or 48 volts makes CS fairly quickly. If you add 1/4 CS as a starter, you will reduce the brewing time by half or more. One cup of CS + 3 cups DW, brewed for 45 minutes at 36 VDC is a formula I've used a lot.
