Perhaps I may contribute in a small way. The initial conductivity of the water determines the current flow and rate of production. Ultra pure water---below about 1 PPM TDS will not produce much silver with some systems. A small amount sodium hydrogen carbonate solution is added to improve the conductivity. This similar to the natural rock minerals found in water. The baking soda per-se, if any remains in the finished silver, will have insignificant effect on human physiology.
Perhaps a chemist can tell us the reaction of the carbonate with the silver, if any. I would like to see the predicted behavior of the entire system, and the associated physiology of the reactants.
