Actually, you could just do this via the router, like so:
<[EMAIL PROTECTED]> = lcs@DNS-name-of-IMAP-server (i.e. [EMAIL PROTECTED])
Just have the mail.spellnetwork.com server in your MX records, so all mail will go through your SIMS server, and for the accounts you specify, be directed to the IMAP server.
Use fetchmail on teh OS X machine to get the mail. fetchmail will deliver the mail to your local imap server on OS X and everything will work perfectly. This is how I handle ALL my mail now.
poll spellnetwork.com with protocol pop3 username "lcs" with password "xxxxx" is lcs here
