I'm using Skim with the italian localization. As a menù entry is badly translated, I corrected it modifying Localizable.strings inside Skim package. Opening this file I also noted that there are other missing or wrong translation. Moreover, Italian is not cited among supported languages in http://skim-app.sourceforge.net/wiki/index.php/Skim_Localization . The problem with this procedure is that every time Skim is update (and this is happening quite often lately) I have to edit the file again. So I think I better option would be to officially support the Italian language, and I volunteer to do it.
