When the UK government ran the national census a lot of people put their religion down as Jedi Knight to see how many would have to do it to get it accepted alongside other religions. Since a religion is a belief system if enough people sincerely believe something by definition it's a religion. Of course it would be easy to say that most of the Jedi were not sincere therefore it shouldn't be counted but proving sincerity is a bit of a problem. Maybe we should get the same people to put OpenOffice.org or Open Source in as their religion.
