Keep in mind that the important thing is to match the voltages & impedances of the inputs & outputs. Too high a voltage in can blow low voltage circuits. Audio out to microphone in can damage the electronics.
I have a little USB device from Griffin that works well. It is the Griffin iMic and sells for $39.99. It accepts either microphone input on one side or regular audio out from a headphone jack on the other. I connect it from my stereo's headphone output to the Griffin device.
Once you have that hooked up, you can use pretty much any sound capture & editing software to record the material. There are lots to choose from out there.I would recommend sw that allows you to apply some filtering to the sound. LP's often have hiss and pops (the later due to scratches). Such filtering sw lets you remove these, or at least reduce them. Using headphones to listen to to the recording as you tweak the filtering is a good idea, since they tend to be sensitive to small changes. Make the recording first and then apply changes to a copy until you get the desired results.
Once you have the recording the way you want, then you can compress it into whatever you want. iTunes certainly works well for this. I usually use it since that is where I want the recording to end up eventually. I will also burn a CD as backup. After all, I just went to a lot of work to extract the recording, I would just as soon not have to do it again.
