I have a friend that has done this. I believe he eventually ended up buying a box that would connect between the Phonograph and the computer. I cannot remember it outputted USB or audio (or both). What I DO know is that connecting the player directly to the audio in on the sound card yielded crappy results and this box made a perfect match to the LP. As far as software, I believe there was a program packaged with this box but really any audio recording/capture tool should work.

What you are referring to is a phono pre-amp. Phonographs output a signal that is different from standard 'line level' of most other components. That is why amplifiers have a specific 'phono' input to adjust the signal level up to standard line level. Once you have the pre-amp, Macintosh computers accept line level input using the mic jack and a standard 1/8" stereo plug and capture it at CD quality, so the only extra hardware would be an RCA to stereo 1/8" adapter and you have the hardware. For software, you need something to capture the audio input and something to convert it to MP3. I have used Sound Studio to capture and edit audio and iTunes to convert it to MP3s. Other people have their favorite ways to do the same thing.
