Ok, we now have an artifact that is built against the LTS version of Qt 6 --
likely a better plan, anyway. And that one will run on macOS 12.3 or newer.

This is an x86 binary, I'll switch the arm one to be build with the same stack
as well. And stop building 6.10.1 based ones, I guess. Not really any point to
them AFAICT
Now we need to get some testing for those to make sure I didn't break anything
in the process - and to understand what (besides printing and integrated user
manual) is missing.
Likely the best way to do this is to simply merge this and have it be part of
the next 'current' build, I guess.
But if any of you Mac users would like to give it a spin, please be my guest.
The x86 binary above will of course work on Apple Silicon Macs as well.
