I tried visiting a bookmarked item to see this, and fell over at the
firt hurdle.

*-Click on the icon, red * appears on icon, tool tip changes to 'edit
this bookmark'
*-Click on the icon, appearance doesn't change, nothing else happens

What am I missing?

The URL you bookmarked was probably redirected to the URL you ended up at.
For instance, if you have bookmarked:
http://seamonkey-project.org/
then visit that bookmark, you'll get redirected to
http://www.seamonkey-project.org/
