IMHO moving the tags from the building to a node is mainly a regression. Data users would no longer know that the full building is dedicated to the school (for example part of it could be residential/commercial/associative). There is some logic in your POV that "no information is better than faulty information" (removing information about the school's geometry would be better than leaving a smaller-than-correct geometry), but if we were following that logic we'd hardly be able to contribute any data to OSM. Instead we add reasonably-correct data (amenity=school on the building) and later improve things. If you can see that the school encompasses more than the building, draw the boundary. If you're not sure of the exact extent of that boundary, add a fixme tag or a note.
