You can use folder-level templates, and put the %FROMNAME="name" (the name in
the From: field), %FROMADDR="address" (address in the From: field),
%REPLYNAME="name" (Reply-To: name) %REPLYADDR="address" (Reply-To:
address) to change that.

You can probably use Outgoing mail filters for that.
