I have already implemented such a thing, with GPG signatures on the 'document' module. The caveat is that you need to use the native clients (gtk, kde), because we need tight control of the way the client opens a document. However, the result is a signature on the document (binary content), which cannot be spoofed, even by the OpenERP server itself. It is also easy to verify /outside/ OpenERP.
