I use text view to better understand where the changes fit to. You can set 
'Show functions' option in diff settings to true. As a result in 'text' tab you 
will get the function name for each change. Essentially this will be the output 
of a diff command.

Hunk selection view is self explaining, you just select hunks with its help. 
Probably this could be merged with the text view but still for me the text view 
is the best for understanding the difference between the uncommitted version 
and the repository version.

And 'Commit preview' tab gives you the understanding what exactly you are going 
to commit to the repository given you selected just some of the hunks, not all 
of them.

So, in short, the difference between the tabs is as follows:

1. 'Text Diff' shows the difference between your working directory and the tip 
repository version
2. 'Hunk Selection' permits you to select just some of the changes for current 
commit operation
3. 'Commit preview' shows the difference between the version you are about to 
commit and the repository tip.

1 and 3 will be the same if all hunks are selected.
