It's just that you have to work at it a bit (see the NFS thread that amcluesent referenced), and your performance will probably be lousy unless you mount the database/cache on a USB drive or SD card attached to the Touch. And even then your performance may be lousy. You can do it -- it's just not supported because it's a problematic configuration. Those are two different things.
