Neither do I have windows server and I even do some development for Trac 
in windows. You can run Apache and Trac on normal workstation - idea is 
just to get known about configs and pieces involved etc. which IMHO a 
bit easier to learn in windoze. Then it's much easier to setup running 
system on *nix machines.

If you want to learn *nix Trac is not best resource for that. There is 
tons of beginners articles/tutorials/books about *nix system - usually 
there is even guides spesific to your favourite *nix flavor.

BTW, you did your homework?

http://www.google.fi/search?q=trac+on+centos and you get several 
different docs to setup Trac on centos. First link being quite 
explaining one including setting up all those problematic things you 
described.
