TextMate, definitely. It's fast, lightweight, yet versatile and very extensible. Not just for TG, but also for anything else (PHP, httpd.conf, whatever). And if there's no TextMate around, there's always vi.
I don't know about that CMD-= thing, I will look for it (which bundle?), sounds useful.
