I believe I am using the Java JRE included in the distribution - looking
at the java.home entry under configuration details inside uDig shows the
location of the JRE nested inside the uDig directory. 

WRT the linux machine - the work machine I am using is currently running
RedHat EnterpriseLinux WS3.

I've just tried uDig 1.1RC1 and the development trunk and both were  
able to view the WMS you provided.  MInd you I am on a Macintosh  
right now.  I'll get a linux user to try it out.  Are you sure you  
are using the Java JRE provided with the application?  If a different  
java is being used the Image IO plugin might not be used which could  
cause your error.  I assume that you are on a normal x86 linux box?
