You should be able to do this.  How large is your thumb drive?  If it
is 8 GB, you should have no trouble loading a full Linux distro on
there.  It would probably even fit on a 4 GB drive if you don't install
gnome, kde, etc.

The important thing is that you have your data separate from your OS,
so you can experiment with different OSs without worrying about
damaging your data.

I've seen UFS used with DVDs.  I would imagine any Linux distro would
support it.

The headless aspect is more of an issue with your hardware than the OS.
As long as the bios can be configured to allow the machine to boot in
the absence of a keyboard, monitor, and mouse, you should be good to
go.

As you probably read above, I am running Open SuSE 11.0 booting from a
USB thumb drive and am running headless.  I had no trouble.  Ubuntu
should work too.  If you try one and it gives you trouble, try the
other.  Deciding which distro to use is usally a matter of personal
preference based on personal experience or on the experience of those
you rely on for help (friends, etc.).
