All the other comments have been right on. I would like to add why I 
chose an ACARD ATA/66 (which I believe, but would not bet my life, is 
identical to the Sonnet ATA/66) over a SIIG ATA/133, which was the 
same price (I could find both for $50).

The ATA/66 cards emulate a SCSI card, which means the 8 GB first 
partition limit for OS X on IDE drives in Old World Machines does not 
apply. I was able to install OS 10.2 on a 20 GB partition of an 80 GB 
drive attached to my ACARD ATA/66 in my 8500. I had to put OS X on an 
8 GB parition in my Beige G3 and it is way too small.
