You shouldn't have a problem with your configuration. I have an S900 with an ACard and a 120gig hard drive--works like magic! Here's some advice: First get OS X running on your Umax (J700), then add all the extra cards. You should put the ATI Orion into the first or second slot. You should be okay with your USB and Firewire cards in the lower slots (they won't show up in the Apple System Profiler, but if you connect devices to them, they will show up).
