OMG I need some help - (10.2.8)

I just had a very very important folder of more than 10 gigs in size get deleted from one of my drives.
I was using OnyX to do some clean up - it's always worked pretty good in the past, but this time the wrong options must have been selected ( you think?)
I need these files bad! This folder contained A LOT of folders of my photo archives & some related apps. Can anyone help me to recover the main folder? The only way I know of to recover erased files is the Norton's un-erase or recover thing. The problem with that is I'm too convinced of Norton's abilities ( although, I 'm attempting it as I type here) and it also shows every minute file from an app, etc. individually. Even if I did recover them - I wouldn't have a clue where they go. Norton's is also showing different files from with in the deleted folder to be coming from separate drives (?) I'd really like to be able to recover the entire folder as one item if it's possible.

The other issue that might be complicating things is me :-)
I'm really not all that knowledgeable about the inner workings of OSX ( and I don't know squat about unix)
If there's a better way/app/utility to recover the folder/files - please I need a huge clue - I'm lost here.
(short of sending the drive out to some data recovery company - I don't think I could afford it right now)
From time to time, I read you folks talking about backing up/archiving/etc. but I think I'm missing something here - you might as well be speaking a different language sometimes - I really don't grasp the whole "backing up" thing completely. I have 4 - 40gig, 2- 60gig, and a 120 gig drive running on 2 different machines. If I back all this up, where do I put it? or like I said, am I misunderstanding a crucial bit of know what here? My clandestine approach to this was to keep getting more drives, but that never addressed what to do if THIS were to happen.

ANY help would really be appreciated.

Thanks
