I guess that depends on your work habits. If you just leave a few apps running and don't switch between them a lot, it seems fast enough, but I don't work that way... if it takes more than a few seconds for a program to finish doing something, I do it in the background and work on something else while I'm waiting.
Yeah, I haven't used OS X yet on a 7300-9600 machine as my primary use Mac. My 7600 G4/400 w/Rage128, 45GB IBM IDE, & 768MB RAM is a good performer and is fast enough for everyday use but it is heavily upgraded (luckily using old/cheap/free parts).
I'm setting up a 7500 G3/275 with a 100BT card and large HDs for fileserver use only and that'll be a great use of older hardware- all the advantages of OS X's efficiency but no GUI overhead.
