OK, take it all back, I think I understand better now.

The *important* bit is that you have to select "Create Folder" when
asked to 'Select a remote destination folder' then it creates a new
folder under the remote root folder.  You can add as many as you like
then.

It's not very obvious what is going on until you actually do it
though.
