If you're on linux, you can remove the old jars, copy in the new ones, then restart. If you're on windows, you're stuck with stop, delete, copy, start. It's also possible to stop and start cf on the command line in windows, if you want to script it (which I have)
Now all we need is to do is persuade adobe to ship a newer version of poi with coldfusion...
