Yeah. apt-get remove. :-) Knoppix is good for getting a working
system up and running in the least amount of time; tweaking and
configuring the installed packages is left as an exercise for the user
afterward. I would tend to prefer that approach in the context of an
install fest (do the hard stuff like partitioning and hardware
tweaking there, and leave the easy stuff like installing and removing
packages to be done later at leisure).
