My recommendation would be to use and secure the distro with which you are most comfortable. I use Slackware for a server OS, others use Debian, Fedora, Gentoo, *, etc. The nice thing about distros is that Apache is Apache, ssh is ssh, * is * no matter what you use. Sure there are differences between distros, but they are minor, and can usually be figured out by reading a few install guides. Some resources I've used in the past to secure up my servers is The Linux Network Administrators Guide, and the HOWTOs from www.tlpd.org. If you go with gentoo, I've heard that the forums are great, so I'm sure that someone has posted a HOWTO and setting up a secure gentoo server.
