Bob:

If you're tying your own flies, just point the hook
down and mash the barb in between the vise jaws before
you start tying the fly.  

But you mentioned "stream-side", so I'll assume that
you're buying, not tying.  In that case, I agree with
Eddie.  Get yourself a Leatherman or other multi-tool
and use the pliers attached to them.  My experiences
agree with yours:  a hemostat or similar "dehooking"
thing usually isn't enough to get it mashed, so you
need something more robust.
