The app allows you to set the type of cooking you want to do, how much pressure (high or low), how long you want it to cook, if you want, you can load recipes, go to keep warm function or cancel in the middle of a function and a bunch more thing that I am not thinking about right now. You can also check temperatures, how much duration you have left, pressure levels and other things that you just can't do without the app. As a blind person I wouldn't have it any other way. Yes, you can use it without the app, but you are guessing and once the program is under way, you have no idea of what actually is going on. I really do love my instant pot. Cooking is a blast with it and you can cook things that might have taken all day before in just a couple of hours or less. Stews and soups taste great and are in my opinion even better than when slowcooked. Although, you can use the Instant pot in slow cook mode if you like. I have and will continue to enjoy the instant pot and the app.
