All that airplane mode does is turn off all external access like to the cellular data and wi-fi. So, possibly the app got stuck trying to access something and toggling Airplane mode on then off got it unstuck. Kind of like hitting the top of a TV when it wasn't looking right back in the day of the old tube sets, grin.

I have numerous Amazon devices around the house and I didn't want to lose all the information about these devices stored in the Alexa app. Surprisingly, turning off and then turning on airplane mode solved the problem.
