When you do what you describe you are not actually turning off the phone, you 
are restarting it.
If you want to turn it off and you don't want to use the buttons, you can go to 
Settings > General > Shutdown and double tap.
This also brings up the same menu as holding down say Volume Down and thew Side 
button, focus is most likely on Power Off, but just make sure of it because as 
I said, it's the same menu and it also includes the emergency call buton.
Anyways, if you simultaneously press and  hold volume down and the side button 
until the menu comes up, the only way you call emergency services would be if 
focus is on that button and you double tap without tchecking.
I always swipe left until I get to the Power Off button and if it seems I am on 
Power Off already I may even swipe right once and back to the left to make 
sure. The screen when this menu comes up is laid out as follows:

At the very top you still have the status bar with the time, your cell signal, 
Wi-Fi and battery status on the right
Just underneath that is where it says "Double Tap to the Power Off" button, for 
a sighted person it actually says "Slide to Power off" because instead of 
double tapping they do a left to right swipe.
After this there is now something I realize I never heard before, it says 
literally the following "location.fill.radiowaves.left.and.right    iPhone 
Findable After Power Off   Forward"
I tapped on that to see what it would do and the following message pops up on 
the screen:
iPhone remains findable after power off.
Find My helps you located this iPhone when it is lost or stolen even after 
power off.
The location is visible in Find My on your other devices and to people in 
family sharing you share location with.
You can temporarily turn off Find My network and it will resume when this 
iPhone is powered on again.
Then there is an OK button.
What I don't know is whether tapping on this turns off the Find My after power 
off because the only thing you can do when you see the above message is tap the 
OK button and this takes you right back to the same Power Off screen, but this 
weird sounding and not very descriptive button is not read any differently by 
Voiceover. I will write to Apple Accessibility and ask for clarification 
regarding this.
OK, back to the Power Off screen description:

If you swipe right again you now come to the "Medical Id" button
Another swipe right takes you to the "Emergency Call" button
If you explore the screen instead of swiping right you will find that there is 
a bit of a gap between the first two buttons and these two which are pretty 
much right in the middle of the screen.

Lastly, if you swipe right again from the Emergency Call button, you find a 
"Cancel" button and as the name implies, if you double tap here it will again 
close this screen and take you back to wherever you were before.
That button is again after a gap and it's located near the bottom of the screen.
All these buttons go right across most of the screen from left to right, i.e. 
you can touch your screen near the left side and drag your finger down and find 
them or you can touch the screen near the top on the right side or in the 
middle.

You really shouldn't be that afraid, you are much more likely to accidently 
call emergency services if you press the side button too many times repeatedly, 
just pressing and holding a volume button and the side button won't do that if 
you are careful not to double tap afterwards without making sure you are not on 
the emergency call button.

Subject: two questions, signing out of iCloud and turning off iPhone

First, when reading the instructions for selling or giving away or whatever an 
old iPhone, before erasing the iPhone, one is also advised to sign out of 
iCloud, and I was wondering why since erasing the phone signs one out of 
iCloud, anyway?

Second, in regards to turning off the iPhones without the home button, I know 
Apple talks about holding in one of the volume buttons and the side button for 
a few seconds. But being afraid of calling 911 by mistake, I've always pressed 
the volume up button and released it, pressed the volume down button and 
released it, then pressed the side button and released it and I have gotten the 
dialog to shut down the phone. I know Apple gives these instructions for force 
restarting the phone, but one needs to hold down the side button quite a bit 
longer for this. Anyway, by turning the phone off the way I am, what am I 
doing, and does it harm the phone in any way?
