Hi Vicky, The vol up / down and power doesn't turn the phone off it just restarts the phone for you.
Just use vol down and power at the same time,and flick to the power off, As for signing ou of iCloud, Yes you can I normally do both find my and icloud / apple id at the time I do the eraise, That way I get it all done in one go.
