Automatic updates refers to apps only, it will not automatically upgrade to iOS 8. In fact, if iOS 8 is in fact installed and not just downloaded to her device she or somebody else must have done this deliberately since you have to agree to Apple’s terms and conditions twice before the install actually starts. Sorry, but that’s a definite and it will not install automatically. I don't think that the update is installed unless she accepts the Terms & Conditions Agreement. I could be incorrect on this. I know that I noticed that automatic updates was turned on and updating began on my son's iPod when I plugged in the iPod. I was able to stop the process by unplugging the iPod and turning off automatic updates.
