Automatic updates refers to apps only, it will not automatically upgrade to iOS 
8. In fact, if iOS 8 is in fact installed and not just downloaded to her device 
she or somebody else must have done this deliberately since you have to agree 
to Apple’s terms and conditions twice before the install actually starts. 
Sorry, but that’s a definite and it will not install automatically.

Perhaps she has automatic updates turned on? This can be found and turned off 
by going to Settings, iTunes and App Store. 

 

With automatic updates turned on Apple forces the update to your device. I 
don't think that the update is installed unless she accepts the Terms & 
Conditions Agreement. I could be incorrect on this. I know that I noticed that 
automatic updates was turned on and updating began on my son's iPod when I 
plugged in the iPod. I was able to stop the process by unplugging the iPod and 
turning off automatic updates.

This may be an unfair comparison, but a couple of days ago on my PC, Microsoft 
pushed through an i.e. 11 update. I use Jaws 14, which does not work well with 
i.e. 11. I was able to call for free the Microsoft disability support line to 
walk through removing the update because they understood the negative effect on 
my screen reader.

 

By comparison, apple charges for their tech support, which my wife does not 
have, and there is no going back to the previous ios version.

 

I think I like Microsoft’s corporate policy better.
