Hello all.

I have recovered my Notes...  :-)

It's a cautionary tale too about the difficulty of retrieving stuff from iCloud 
if something goes wrong and data goes from the iCloud server. It's hard to get 
back. 

I found it is very useful to back up the iOS device to 'My Computer' because 
this way I was able to recover the data using Time Machine. But from what I 
have found, it is only possible to recover the latest backup from iCloud. If 
something goes wrong, you lose data, then don't realise it and another backup 
is done, it clears the old data in the iCloud backup for good. Others may have 
a way around this and able to get into the older backup of iCloud. But for me, 
it doesn't seem very helpful!!

My solution. I went to User Folder’s Library/Application Support/MobileSync and 
opened Time Machine and found a date prior to when I noticed my Notes had gone. 
I reinstated that backup, creating a duplicate as well just in case. 

then in iTunes when I went to 'restore from backup' I had the new option there, 
the data I had recovered from Time Machine. 

Prior to restoring the iPhone, make sure you turn off any automatic syncing 
with iTunes. After the restore is complete, make sure you turn on Flight Mode 
as soon as possible to stop the device from syncing. Twice I did not do this, 
and found that despite my Notes being reinstated, as soon as the iPhone did a 
sync, it wiped them again. 

 I carefully emailed each individual note to myself, then turned off Flight 
mode so the emails would send. Then I pasted the data into Notes on iCloud.com  
 
As expected, the Notes all propagated through my iCloud devices just as they 
should. 

I'm about to restart my computer and devices, but so far so good.
