Sorry for being so condescending here, but I read too many of that kind of answers already. *Please* don't hesitate and turn the drupal demo at http://www.mywebclass.org/~bhorst into something usable - install the plugins you mentioned, etc. Keith (who hosts the demo) did offer admin logins for the site and invited others to finish up the demo. So please don't be afraid to screw something up.
