The username to start the service with is saved under HKLM\CurrentControlSet\Services\xy\ObjectName. Don't know where the password is saved, would agree to SAM, but maybe you don't need to change anything manually: How about "sc config" with parameters "obj" and "password" as a custom action? It's designed to change services after installation in a proper way and you could depend the custom action on features or something like that.
