Any glider polar you select via 'Polar type' is built-in to XCSoar.

You select a custom polar file by changing 'Polar type' to "Winpilot
file" and then selecting the file (Nimbus2c.plr) in the 'Polar file'
box. This is how you select a custom polar in 5.2.4, so I assume it is
how 6.x works as well.

Well - that had me stymied for a minute - there's no "winpilot file" in
the available list! However, there is hidden away "External Polar File"
- and that works fine.

However, when I do that, the wing loading disappears in the "flight
setup" screen. Why is that?

Answering my own question I can see that this is because the winpilot
file doesn't include wing area - and an extension to cover this has been
proposed.
