I'm surprised that the MikroTik S-RJ01 Isn't rated below 0 degrees; it
doesn't have any optics which are usually the most temperature-affected
component.

Be careful if getting copper SFPs from FiberStore to use with Mikrotik;
unlike the optical SFPs which always worked for me, it seems the copper
interface isn't completely standardized between manufacturers. The
Gigabit-only 1773 did not work with Mikrotik RB3011 for me, while FS
reported that 34976 generally works with MT. Unfortunately, both are listed
as the same P/N, SFP-GB-GE-T.
