Getting back to the more basics of this project, Connor already gave a pritty good example on how flying could work, I have an idea when it comes to docking to space station or planets.
I would use a system you had in games like x2. What would happen is that you fly into the station and then have to aline yourself with a docking clamp. this worked by reducing your speed and pointing your nose in a specific direction, you could implement this by having to keep a beeping tone at a certain pitch that emulates verticle alinement and the same tone in the center for the horizontal alinement.
In X2, flying to fast or if you didn't hit the clamp your ship would either take damage or get destroyed all together which I quite like because people then actually learn how to fly their ships.
