Tony, you can actually bake a hi-res model to a low-res model in one
step. See the documentation here:
http://wiki.blender.org/index.php/Doc:Manual/Render/Bake

"Selected to active" is the option to select. This also allows for the
creation of highly detailed normal maps and such. One way to make your
renders look more realistic is to turn on Ambient Occlusion in the
material buttons. This will give you much more realistic lighting and
can be combined with normal lights for a great effect.
